- The mold on some cheese (Bleu, Gorgonzola) in controlled at the maker is consumable! Mold on cheese which is improperly wrapped or left too long in the refrigerator should not be eaten!
- Larger blocks of cheese should be cut into smaller portions, wrapped properly and stored in freezer bags and kept in the "freezer" compartment.
- Cheese when wrapped in a cheese cloth dampened with white vinegar then placed in a Ziploc bag or container will last much longer and dispel mold.
